Make the most of your meal-planning | Chili; 6 Different Ways
Put this dish together in just minutes- perfect last minute dinner idea! So many different ways to enjoy.
I do two different versions. Sometimes, I'll do this Chili with a Ground Turkey. Other times, I will substitute Ground Turkey for 1 Cup Lentils.
Chili Recipe
- 1lb Ground Turkey
- 1 Packet Taco Seasoning
- 1 Cup Dry Lentils
- 1 Green Pepper, diced
- 1 Onion, diced
- 2-3 Jalapenos (seeded & diced)
- 1 Carrot, grated (optional)
- 2 TBSP Olive Oil
- 2 TBSP Minced Garlic
- 1 (16 oz) Jar of Salsa
- 1 Can Fire-Roasted Tomatoes
- 1 Can Pinto Beans, drained & rinsed
- 1 Can Kidney Beans, drained & rinsed
- 1 Can Black Beans , drained & rinsed
- Salt + Pepper, as desired
Begin by browning ground turkey with Taco Seasoning, if using meat. Set aside
Saute any vegetables you desires. I usually do Green Pepper, Onions, Jalapenos and A Small Amount of Carrot
Add 1-2TBSP Olive Oil to stock-pot. Lightly brown minced garlic, S + P
Next, add fully-cooked meat (if using.) Add all of your sauteed veggies, 1 Jar of Salsa (I like to do the fresh whenever possible, but jarred salsa will be fine.) Fire-Roasted Diced Tomatoes, Kidney Beans, Pinto Beans & Black Beans.
Bring pot to a boil (Add Lentils, now, if using) then allow to simmer for 20-25 minutes.
Serve hot with sour cream, cheese, spring onions & cilantro, if desired.
Perhaps most importantly, I make the most out of this huge batch of chili by repurposing the leftovers. Here are some of the recipes my family loves to have with the leftovers.
