 Blackened Chicken Dinner-Salad Recipe

Hearty & Protein-Packed; this blackened-chicken salad is promised to satisfy every appetite.

 

Blackened-Chicken Seasoning:
 
  • 2-3 Tbsp Chili Powder
  • 2-3 Tbsp Paprika
  • 2-3 Tbsp Garlic Powder
  • 1 tsp  Cayenne Pepper
  • Salt & Pepper; to taste
  • Squeeze of Lime Juice; optional

Pat Chicken Dry with a Paper Towel. Place Chicken into Gallon Freezer-Bag with Seasonings; Shake. Remove Fully-Coated Chicken and place into Cast-Iron Pan; medium-high heat about 6mins each side or until internal temp reaches 165F. Add a squeeze of Lime Juice then, Remove from heat and allow to rest 5mins before slicing for salad.

Salad:

This portion is more or less up to you. Consider adding additional proteins & fats; those are the things that are going to really help keep satiated & energized.

Here is what I added to my bed of Spring Mix:

  • Boiled Egg Slices
  • Crumbled Bacon
  • Parmesan Cheese
  • Diced Avocado
  • Sliced Red Onions
  • Croutons
  • 7-Grain Rice Mix

Additional Ideas to Increase Nutrition:
 

  • Sliced Grape Tomatoes 
  • Sliced Cucumbers
  • Spinach 
  • Farrow (a grain)
  • Quinoa
  • Brown Rice
  • Goat Cheese Crumbles 

Dressing: 

Psst, I just used the knock-off Olive Garden dressing from Aldi's ;) It's okay to take short cuts sometimes to spend more time enjoying your food with your family.
